Saw this recipe on pinterest and ive adpated it slightly... This made enough for two portions for me which i squished into a ramekin!
2 ripe avocados
1 tomato chopped
Some finelly chopped shallots ( to taste)
Juice of 1 lemon
Salt and pepper
I mashed the avocado, then chopped the tomatos and onions, stirred in and then added the lemon juice.
Store in fridge
